One of my favorite gifts to give is a dinner party… especially for men.  I never know what to get them, really and I do know that the way to make just about any man happy is to make him a good meal! It’s also a lot more personal.  I love that at a dinner party you truely get to spend quality time with the people you love.  It’s a favorite birthday gift, but this year I decided to add a dinner party gift to both my brothers-in-law for Christmas.

The way I make I try to make it an extra special gift is to ask them to pick a country and I will design a dinner with that country in mind.  My brother-in-law, JR, picked Italy for his country this time around, so he and my sister came over last Sunday and we had ourselves a nice little dinner party and a fun game of cards (Quiddler). So we started with a Lobster Risotto, then moved onto Spaghetti and Meatballs (recipe soon to come) with garlic bread and finished things off with giant individual Tiramisu Trifles!  And if do say myself, everyone was pleased!

This trifle recipe is simple, the recipe is easy to follow, it’s a bit less expensive than most recipes you will find and it’s egg free (I did this for time’s sake , not for allergy sake, but hey, if it works for you great!).  Some of the cost is cut down because it is a mixture of cheeses, half Mascarpone cheese (a mild Italian cream cheese) and half American cream cheese (which is less than half the cost of Mascarpone).  Also, making the cake portion with a box mix instead of buying traditional lady fingers gives the trifle a fun different texture and adds in some savings as well.

To make my Angel Food Cake, I am just using a simple box mix… which involves this flour mix and water, so easy. But, if you prefer you can

Bake in a square pan like this or in an angel food cake pan.

I start the process of breaking the cake apart by making some cuts. But the real work will come with breaking apart with my fingers.

Remove and break apart as you place in glasses.

Start with one bar of softened American cream cheese.

One 8 oz. Mascarpone cheese. This is like an Italian cream cheese that is slightly less tangy and a bit softer.

Add in the Mascapone.

Add in confectioner’s sugar.

Add in cream

The cheese mixture should be nice and smooth and fluffy now.

To make real whipped cream add cold whipping cream or heavy cream into the bowl of a cold electric mixer, start the mixer going on med/high with the whisk attachment until foamy. Add in confectioner’s sugar and beat until a whipped cream forms. Careful not to over whip turning your mixture into butter 🙂

Make some espresso.  If you don't have an espresso machine, you can buy some instand espresso powder and brew some that way or just make a cup of very very strong coffee.

Espresso has this natural head of foam on top… If you don’t have a machine, don’t worry about it.

Start by adding in a bit of cake and some espresso, enough to soak the cake.

Now some cheese mixture. When completing this step, be sure to get the mixture to all the edges of the glass effectively sealing off the layer… this way, when you place the cake on top the espresso will settle into the cake in that layer instead of sinking to the bottom.

Next a bit of whipped cream… and repeat… In this size glass I am able to do three layers.

As the glass gets larger, the amount I am putting in fills in a larger space so I am using more.  Just be sure the cheese filling kind of seals off the layer below it so the esspresso is able to really soak into the cake.

Tiramisu Trifle

4-8 (depending on size of glasses)  ingredients:

1/2 prepared Angel Food Cake (mix and water)

1 8 oz. package cream cheese

1 8 oz. package Mascarpone cheese

1/3 cup plus 3 Tbs. Confectioner’s sugar

1 pint heavy whipping cream, divided

1 cup prepared espresso, cooled

chocolate shavings for garnish

 Directions:

For cheese layer – combine softened cream cheese, Mascarpone cheese, 1/4 cup heavy whipping cream and 1/3 cup Confectioner’s sugar in an electric mixer and beat on med/high with the paddle attachment until smooth and fluffy about 3-4 minutes.

For the whipped cream layer – Place the remaining heaving whipping cream in the cold bowl of an electric mixer with the whisk attachment.  Beat on med/high until foamy.  Add in 3 Tbs. Confectioner’s sugar and continue beating on high until a whipped cream forms.  (About 2 minutes) *Careful not to over beat.

For the cake layer – Prepare per package instructions and allow to cool fully before using.  Break apart with fingers until you have pieces roughly the size of quarters.

To build – Line up 4 large glasses or 8 smaller glasses for ease of use.  Add in cake, drench with a couple Tbs. espresso, add 2-3 Tbs. cheese mixture (being sure to touch all sides), add in 2-3 Tbs. whipped cream.  Repeat process until you reach the top of the glass.  Top with remaining whipped cream and sprinkle with chocolate shavings.

Refrigerate for a minimum of 4 hours before serving.  Remove from refrigerator about 20 minutes before serving.  Enjoy! 

 

Hot Pastrami Panini

A hot pastrami sandwich can only be improved in one way, to make it into a panini.  So that’s what I did.  Panini-ing a sandwich nine times out of 10 will serve to elevate it to a new level.  This is no exception.

If you have never tried pastrami, you are really missing out.  Whatever can be done to this meat has been done.  It has been brined, dried, highly seasoned, smoked, and steamed.  With the care that it takes to produce a deli meat such as this, it is only right to treat it with the reverence it deserves. In most cases pastrami meat that is found in your run of the mill grocer’s deli is beef, but it can be made from pork, mutton or turkey.  In this case we are sticking to the beef variety.

Traditionally served hot, paired with mustard and cole slaw and some sort of rye bread, this sandwich is anything but ordinary.  I have taken the traditional and modernized it a bit using a marble rye, a Dijon mustard and a home-made Honey Mustard Slaw, oh and a panini press!  Can you say yum?

Freshly sliced deli pastrami.

Place slices on skillet all separately.

I chose to use marble rye bread. The rye is pretty traditional for a pastrami sandwich, the marble (the darker part) is a pumpernickel bread which adds just a touch of sweetness which will be reflected later in the sandwich building.

This is a stone ground Dijon mustard.

Spread evenly on the bottom of bread. This acts as glue and adds some great flavor.

Fry up the pastrami until it looks like this. This should take about 5-7 minutes on med. heat.

I know you can’t see it, but this is six pieces of pan-fried pastrami on top of that bottom piece of bread with the mustard spread on it.

Add two slices of cheese. I chose to use some deli sliced American, but a swiss, provolone or even a mild cheddar would be good here as well.

Pile on some Honey Mustard Slaw. This is great because it will echo the stone ground Dijon we used on the bottom bread slice.

Get a little veggie oil going on your grill pan. This is the Pampered Chef square grill pan. (I love this pan!) Heat on high.

Place the grill press on the pre-heating pan to heat up itself. This way when it’s placed on top, it can start the grilling process.

Place your built sandwiches on the grill pan. (My husband isn’t a slaw guy)

Remove panini from the pan when grill marks have formed and cheese is sufficiently melted.

Hot Pastrami Panini

Serves 2

Ingredients:

12 slices thinly sliced deli pastrami

4 slices Marble Rye bread

4 slices cheese (Swiss, American or provolone)

1/2 cup Honey Mustard Slaw

2 tsp. Dijon mustard

2 Tbs. Vegetable oil

Directions:

Pan fry pastrami on a skillet over medium/high heat until edges get a bit crispy.

Prepare two slices of bread with 1 tsp Dijon mustard each.  Add 6 slices of hot pastrami to each slice of bread right on top of the mustard.  Add two slices of cheese to each sandwich.  Add 1/4 cup of Honey Mustard Slaw to each.  Top each with the two remaining slices of bread.

Heat grill pan with about 2 Tbs. veggie oil with the panini press on top.  Once pan is very hot, place both sandwiches on the pan and press the heated panini press on top of both.  Cook until cheese is melted and bread has nice grill marks on top.  (The sandwiches may need to be flipped to achieve good grill marks.)

Serve hot, enjoy!

Pablano & Cheese Stuffed Chicken

Eating healthy can be tough if you don’t have an arsenal of yummy recipes to fall back on.  A low carb recipe is always great to have in your back pocket.  This may look crazy, but really it’s just baked stuffed chicken with a latin flare.  Shhhh… don’t tell.

To make this recipe you need some basic ingredients, boneless skinless chicken breast, fresh pablano peppers and a melting cheese of your choice.

Place your pepper directly on your flame or under your broiler if you have an electric range. The goal here is to get those char marks.

Cut your pepper in half length wise. Remove the seeds and stem.

Place your chicken breasts on a clean cutting board. If you have plastic wrap, grab a piece and place it over the chicken (I usually do this, but I was out of plastic wrap).

Pound out the chicken until it thins out without breaking through the flesh.

This is what you should get when you are through.

Sprinkle with some kosher salt.

Then crack some black pepper onto it.

This is a block of Monterey Jack cheese. Any good melting cheese would work here… Use a pepper jack if you want a little kick.

Normally I always shred my cheese, but for this recipe, I like to slice it up because I find it holds up better with both the chicken and the pepper.

Season the pepper with some salt.

Now stack it all up on the chicken.

And roll.

At this point if you have tooth picks, you could secure your wrapped chicken.

This is intended to be a low carb recipe, so I am just sprinkling with some panko bread crumbs.

Place them in a baking dish lined with foil and sprayed with cooking spray.

Place a pad of butter on each. Bake for about 25-30 minutes until cooked through.

Place under the broiler for about a minute or two until you get some good color.

Pablano & Cheese Stuffed Chicken

Serves 2

Ingredients:

2 boneless skinless chicken breasts, pounded thin

1 Pablano pepper, charred and seeded

6 oz. jack cheese (Colby, Monterey or Pepper), sliced

2 tsp. Panko bread crumbs (or gluten-free bread crumbs)

2 tsp. salted butter

kosher salt

fresh cracked black pepper

Directions:

Pre-heat oven to 350°F.

After chicken is pounded out thinly, season with salt and pepper, place 1/2 Pablano pepper on top, season with salt and pepper.  Then place sliced cheese on the pepper. Gently and tightly roll.  Secure with toothpicks if needed.  Transfer to a greased baking dish.  Sprinkle with bread crumbs.  Place one pad of butter on each.  Bake 25-30 minutes until cooked through.  Remove from oven and start broiler.  Place under the broiler for 1-2 minutes until bread crumbs become browned.

Let rest a few minutes, enjoy!

Twice Baked Potatoes

Why bake a boring ole potato once when you can bake it twice and make it spectacular?  My Twice Baked Potatoes are loaded with not only butter and sour cream, but bacon and cheese.  I know, I know, not exactly keeping with those New Year’s resolutions right? But, it’s Championship weekend people, I’m still in “football food” mode.

These Twice Baked Potatoes are flavorful, they are packed with everything you love so there is no muss at game time and the best part is you can eat them with a fork and a knife or just pick um right up and you have a perfect finger food.  And I’m not even going to try to pretend they are healthy, but they aren’t fried and they are even gluten-free.  So, they aren’t the worst thing in the world health-wise either!

Make them in a big batch like I have for a party or tailgating or make a smaller batch for dinner.  Or you can do like I did and make the big batch, have them for the party and freeze the rest so you have them right at your fingertips whenever you are looking for an easy side, they freeze great!  Baking potatoes the old-fashioned way is not a quick process, so making a big batch is always the way to go in my opinion.  Here’s how I do them…

I always start off with preparing the bacon, mostly because when I make bacon, I like to make the entire package and we don’t need the entire package for this recipe, so I make breakfast in the morning and then I reserve the rest of the bacon for the recipe. Call me crazy, but it saves me time. In any case, you will need 8 slices of bacon for this recipe.

The problem is when an entire package of bacon is hanging around, it needs to be covered in my house otherwise it will dwindle throughout the morning if it’s not hidden!

Then I gather my potatoes, I like russet potatoes for baking. I try to find the ones that are oval in shape as opposed to round and med/large for variety.

Russets come dirty, so be sure to give them a good scrub, you will be eating the skin on these.

I like to bake them whole, but I like to half split them for ease in cooking time.

I like to make these in a disposable aluminum tray for a couple of reasons. First I am making a bunch here, so I am not wrapping each one in aluminum foil. This tray mimics that. Also, because this makes for easy clean up.

I like to then add a good pinch of salt to each one. We did not dry these, so they should still be wet helping the salt to cling. If you pre-washed or something, then just run them each under water for this effect.

Now turn them all over and do the same thing to the other side. A good pinch of kosher salt to each. It may seem like a lot, but you are really just seasoning the skin of the potato which is very important.

Cover tightly in aluminum foil and bake at 400°F for 1 hour and 45 minutes or so.

Now spit them using your original cut as the guide.

You will have twice the amount at this point which will require a second tray. Be sure to salt the bottom of that tray again.

Scoop out the middles of each potato leaving a reservoir for the filling and a good “wall” all the way around.

Add in your scooped out fillings to a bowl.

Add in a stick of salted butter. Remember you are making 16 twice baked potatoes, that spreads that butter out. Besides, it’s football food. If your potatoes are not hot because you chose not to scald your fingers as you handled the potatoes, just pop this in the microwave for about 2 minutes.

Start to go at it with a potato masher.

Get some good fresh sour cream.

Add in sour cream.

Add in cheese.

Add in kosher salt and fresh cracked pepper.

Now, back to the bacon. It survived! Yay!

Chop it up pretty well still allowing for some good size chuncks.

Add to your bowl.

But reserve some for topping.

Mash mash mash.

Add in some half and half or heavy cream, whichever you have on hand.

Now fill each of your potatoes with a healthy amount. Be sure to spread it evenly though.

Once they are all filled, pre-heat your oven to 350°F.

Add a good bunch of cheese to top each.

Then top that with bacon bits.

Bake for about 1/2 hour until they are heated through and the cheese is all melty!

Twice Baked Potatoes

Serves 8-16

Ingredients:

8 med/lg. Russet potatoes, scrubbed clean

2 cups shredded cheddar cheese, divided

1 stick salted butter

8 slices bacon, fried and drained and chopped, divided

3/4 cup sour cream, plus more for serving

kosher salt to taste

fresh cracked black pepper to taste

water-soaked minced onions or chives for serving (optional)

Directions:

Pre-heat oven to 400°F.  Scrub potatoes clean and while still wet, carefully slice into potato lengthwise about 3/4 of the way through as though you were going to split them for stuffing (see photo above).  Salt the outside of the wet potato with kosher salt on all sides and place in aluminum pan.  Cover tightly with aluminum foil and bake for 1 hour and 45 minutes. Remove from oven and turn oven down to 350°F if baking immediately.

Let cool just long enough for handling. Continue cutting potato along the original cut line spitting the potatoes in half.  Now, scoop out the middle flesh of the potato leaving about a 1/4 inch wall along the entire outer potato skin (this provides stability, see photo above).  Place the scooped out potato flesh in a bowl for mixing.  Add in butter, sour cream, 1 cup of shredded cheese,  3/4 of your bacon, a good pinch of salt and about 10 cracks of black pepper. Mash all ingredients together with a potato masher (warm for a minute in the microwave if the contents are not warm enough to melt the butter and incorporate all the ingredients at this point.)

Now, fill each potato cavity with the mixture.  Top with an additional Tablespoon or so on each along with a few remaining bacon bits.  Bake until heated through and melty for about 1/2 hour.  Serve with sour cream and [instructions]

Easy Cheesy Pasta Bake

My husband often works pretty late and on occasion, I will have a meeting to get to late into the evening as well.  On nights like that I am thankful to have the support of my parents who adore my children.  And my kids love going over to Vavó and Vavô’s house!  But, my mom also works all day, so when they will be there up until bed time and the kid’s need supper, I like to bring by something ready to put in the oven when I can.  something easy and portable is this “Easy Cheesy Pasta Bake”!

Of course if I am making this and bringing it to my parent’s house, then that leaves my husband to fend for himself, not to mention a hungry me when I get home… So, what I decided to do to solve that issue was to make one big batch and divide it among two smaller baking dishes, which was more than enough to feed both homes! (Of course you could make this recipe and freeze half too! – just freeze before the final step of popping it in the oven)

This recipe is great for kids because it has a fun cork screw pasta, cheese and it’s not spicy at all… Of course you could kick it up by using a spicy sausage and spicing up the sauce a bit, but my kids love this version and since Mom and Dad were out working late, the kids win.  It’s got all the same ingredients of a lasagna, but it’s got some semi-homemade ingredients like an easy jarred marinara and it takes about 20 minutes tops to prepare! Then, just pop it in the oven and serve!

This meal is easy enough to be a week night meal, pack away as a freezer meal or serve to a crowd! Let me show you how I did it…

Pick a fun tubular pasta with ridges… I like Cavatappi, it looks like a cork screw. Start this boiling before you do anything else so it can be ready when you finish with the other steps.

Take one package (5-6 links) of Italian Sausage, sweet or hot and take the casings off… Today, I went with sweet because it’s meant to feed the kids. Place in a large skillet over medium heat. I like using sausage in this because it cuts down on some of your work be providing flavor right off the bat, plus my husband loves Italian Sausage.  But, if you wanted to use some ground beef or turkey, that would be fine too! You could even make the sauce without any meat at all!

Dice up an onion.

Add the onions right in with the sausage and add just a splash of olive oil right on top to help them get going.

You want to render out the fat from the sausage and bring everything to a golden brown color. If you have some extra fat in the pan you can either drain it or leave it… I didn’t have much fat left in my pan at all.

Now here is the “Easy” in “Easy Cheesy Pasta Bake”… Add in one jar of your favorite ready-made Marinara Sauce.

For some additional moisture and body add in one can of diced tomatoes… If your family is not a fan of chunks of tomatoes in their food, you should still add in one can of tomato sauce.

Add the tomatoes right in, you want them to cook down a bit.

Add in about 1 tsp. Italian Seasoning, salt and pepper.

Place two cups of ricotta cheese in a bowl.

Add two eggs in with the ricotta.

Here is another “easy” ingredient… Add in 1/2 cup of pre-grated parmesan cheese.

Stir together making sure to really work those eggs in.

Next, add in some shredded mozzarella cheese.

Once you have a smooth consistency, add in some Italian seasoning, salt and pepper.

Once your pasta is drained, add in cheese.

Stir together.

Either divide among two baking dishes like I did, or use one 9″x13″ baking dish.

This is a block of mozzarella… You can find it right in the regular dairy case.

For this recipe, you can dice up about half the block.

Dot the top of cheesy pasta with half of your cubed mozzarella.

Pour the sauce on top.

Spread the sauce.

Dot the top with the remaining cubed mozzarella and some additional shredded mozzarella. Then add on a dash of grated parmesan. Now you are ready to wrap this and pop in the fridge for later or bake.  Whenever you are ready to bake, just place in a 350°F oven for 30 mins.

Easy Cheesy Pasta Bake

Ingredients:

1 box Cavatappi Pasta, cooked to al dente

For the sauce:

5-6 links Italian Sausage, casing removed

1 onion, diced

1 tsp. olive oil

1 jar marinara sauce

1 can diced tomatoes

1 tsp. Italian seasoning mix

salt and pepper to taste

For cheese mixture:

2 cups Ricotta cheese

1/2 cup grated parmesan cheese

2 eggs

1/2 cup shredded 3. cheese

1/2 tsp. Italian seasoning

1 dash salt

1 dash pepper

For topping:

8 oz. block mozzarella, cubed

1/4 cup shredded mozzarella

1 Tbs. grated parmesan

Directions:

Cook off pasta to one minute less than the package ingredients, drain.

In a large skillet over medium heat, brown sausage while chopping it into smaller bits with a wooden spoon.  Add in onions and oil.  Render the fat out of the sausage and drain if needed.  Once sausage and onions are brown, add in jarred marinara and can of diced tomatoes.  To the sauce add in Italian seasoning, salt and pepper.  Cook over medium heat for about 10 minutes.

Meanwhile, in a large bowl combine ricotta, grated parmesan, eggs, shredded mozzarella, Italian seasoning, salt and pepper.

Add cheese mixture to drained pasta.  Place in a baking dish.  Directly on the cheesy pasta add on 1/2 the cubed mozzarella, then sauce.  Now dot the top with remaining cubed mozzarella, shredded mozzarella and parmesan.

Bake in a 350°F oven for 30 minutes.  Serve, enjoy!

*Note: If making this recipe gluten-free, just use a gluten-free pasta and follow all instructions.

 

Stacy’s Meat Lasagna

One of the first truly big meals I learned to make as a kid was lasagna.  My dad just loved the stuff… so he asked me to make it once a week… kind of a funny request for a Portuguese man… but I have always loved making my Daddy happy so weekly lasagna it was!  Over time, I started learing to tweak things here and there. I developed my own methods and preferences.  It was really one of those repetitive recipes that unknowingly taught me how to cook… After all, I wasn’t following a recipe, I would do it week after week and almost each week something would change, some times I kept the change and sometimes not so much.  What better cooking lesson could there be?

Through all this trial and error I learned that meat lasagna is the way to go. Although this recipe has taken me just about 25 years to perfect, it is pretty basic and pretty classic, but has an unbelievable flavor that is both simple and complex at the same time. Homemade meat sauce, hand mixed cheese and mozzarella along with thin flat pasta noodles are what makes up this delicious dinner.

This recipe is a rather large recipe, but you have options.  If you have a big family, you can get 12-16 generous portions here, so great… If you would like to use it for a party, even better!  But, if you just don’t need a huge lasagna, it’s still worth making and splitting half into a pan for the freezer!  You are doing the same work, might as well get two or even three meals out of it!

Here’s how I do it…  There will be 4 layers in all.

Let’s start with the sauce…

I start by mincing an onion.

Place onions in a pan with some heated olive oil over medium heat.

Here are the flavors that you will need to layout head of time… this method will make for a less stressful cooking experience.

Once the onions are starting to caramelize, add in the dry spices… crushed red pepper flakes and italian seasoning. This will allow their flavor to really bloom. Also, add in your minced garlic at this point so it doesn’t really get a chance to burn. Sautée for a minute or two with the onions.

Add in browned ground beef. I happened to have some that I browned up earlier in the week. If you don’t then be sure to brown and drain separately from the onions as draining the fat will take a lot of the flavor of the onions and spices away with it and won’t allow you to get the desired effect with the caramelization.

Add in a few swigs of Worcestershire sauce. This gives you an amazing background flavor you can’t get from much else.

Add in two extra large cans of tomato puree.

This ingredient is indispensable. Add in one full can of tomato paste.

This is what your can looks like when you are through adding in the puree, that won’t do.

Add some white wine into each and swish it around so you can get the remainder of that puree! I hate wasting. You could use red wine here, but I find it to be a bit too strong for a lasagna, so I use white.

Now this is a little more acceptable.

Mix it all together over med/low heat. Be careful! It starts to sputter at this point!

Strip the thyme leaves off the stiffer little branches.

Chop or rip up your basil.

Add in your fresh herbs now.

Cover up your skillet… as you can see, before I even got to my camera, the sputtering has continued.

Now let’s start on the cheese mixture.

You are putting so much work into this recipe… please use a real block of parmesan cheese (the best you can afford) and shred the cheese yourself, it makes a huge difference here.

This is the left over parmesan rind from the block of parmesan I used for the cheese, don’t throw that out! As a matter of fact, if you ever end up with a rind for another recipe and feel the urge to throw it out, avoid that urge and just freeze it for times when you are making sauce!

Toss that in the sauce.

Shred up your cheese and divide a handful of it out to reserve for later.

For this large lasagna, you are going to need a large container of whole milk ricotta cheese.

Dump that into your mixing bowl. You’ll want a medium to large mixing bowl.

Add in your parmesan along with about 3/4 cup of shredded mozzarella cheese. (You can cheat with the mozzarella if you choose to get the pre-shredded stuff or you can shred your own.

To the cheese add in a bunch of fresh cracked black pepper.

Then add in a good pinch of italian seasoning mix.

Add in two eggs.

Add a good pinch of salt.

MIx together.

This is what you should have when all mixed.

Now we just need to gather two more ingredients and we are ready to build our masterpiece!

The first is the pasta… I use this oven-ready pasta for three reasons 1. the big step of pre-cooking pasta before hand gets eliminated 2. the noodles are flat with no ripples and 3. they are thin… all things that make for a great lasagna!

And the next is the mozzarella … This is the cheese that I discovered as a kid and it really makes a big difference in the body of the lasagna.

This is an extra-large lasagna pan… this recipe won’t go all the way up the sides of this really big pan, but if you use a 9″x13″ pan, it certainly will.

Start off by ladling some sauce into the bottom of the pan… this serves a couple of purposes… 1st I always like to sauce the bottom and 2nd the pasta won’t stick to the bottom.

Place the pasta on top of the sauce.

Because we are using oven ready pasta, I like to put a sort of skim coat of sauce on top of the noodles.

Add on the cheese mixture.

Spread the cheese mixture as evenly as you can.

Add the mozzarella slices on top of the cheese mixture.

Now start on the next layer by ladling on more sauce.

when you start a new pasta layer on top of another layer of sauce, you always want to make sure you are laying them out in a different pattern so that when you cut into it, it’s got pasta running from the top of the slice to the bottom.

Finish off the top with a good coating of sauce.

Add some shredded mozzarella to the top.

Grab the little pile of parmesan we set aside earlier and sprinkle right on top.

At this point, bake for 45 mins to 1 hr until the cheese on top is thoroughly melty, but not burned.

When it comes out of the oven, let it set for a good 10-15 minutes before cutting.

Stacy’s Meat Lasagna

Serves 12-16

For the sauce:

2 28oz. cans of tomato puree

1 6-8oz.can tomato paste

1 1/2 lbs. ground beef, browned and drained

1 cup dry white wine

1 cup hot water

1 med. onion, minced

3 cloves garlic, minced

3 Tbs. olive oil

1 Tbs. Worcestershire sauce

1 Tbs. fresh basil

1/2 tsp. fresh thyme

1/2 tsp. red pepper flakes

1 tsp. dry Italian seasoning

1 tsp. kosher salt

Parmesan rind

Directions:

In a large skillet or shallow pot, sautée onion in olive oil over medium heat.  When caramelized, add in red pepper flakes, Italian seasoning and garlic, sautée for a couple minutes.  Add in ground beef, continue to sautée. Add Worcestershire sauce, continue to sautée.

Next, add in tomato sauce and paste.  Rinse tomato cans with white wine and add in to sauce.  Add in parmesan rind and cook over low heat for 30 mins.  When done add in 1 cup of hot water to loosen if needed.

Check for salt at this point.

For the Cheese Mixture:

1 large container of Whole Milk Ricotta Cheese

1/2 cup parmesan cheese, shredded

1/2 cup mozzarella cheese, shredded

2 eggs

1/4 tsp. Italian seasoning

1 tsp. kosher salt

1/2 tsp. fresh cracked black pepper

Directions:

Mix all ingredients together.

Directions:

Pre-heat oven to 350°F.  In a large lasagna pan, start by adding sauce to the bottom of the pan.  Next, layer on the noodles.  Skim coat the noodles with a bit more sauce.  Next, add on a layer of the cheese mixture.  Next, add on the mozzarella slices.  Repeat until you reach the end of your ingredients. Be sure to think about how large your pan is and how to divvy up the layers.  End by covering in sauce and adding on the shredded mozzarella and shredded parmesan.

Bake for 45 minutes or until all the cheese on top has melted and started browning nicely.  Enjoy!

4-Cheese Mac&Cheese

This is the time of year that people start to crave Mac&Cheese. Whether for a football party, a church pot luck, Thanksgiving or a Sunday side or a regular ole weeknight meal, Mac&Cheese is on the menu for many Americans starting in September and continues until you just don’t want to turn your oven on anymore sometime in June.  Now, we are talking baked macaroni and cheese here, this is clearly not the boxed stuff.  Although, the boxed stuff has its place, I see them as two totally different animals entirely.

I never really had REAL Mac&Cheese growing up.  This is not a Portuguese meal and I was never exposed to it.  Not until maybe the last 10 years or so did I really even come to understand the appeal.  I had tried it a few times in my 20’s and honestly I don’t remember who made it, but it just wasn’t very good. Not having grown up with the dish, I had no real point of reference to fall back on.  But, people would always tell me just how much they love it, so I didn’t want to give up on trying it.  There were a few times I gave some a try at a party or gathering and was starting to see where people were coming from, but it still wasn’t there for me, honestly, I found it kind of boring.

So, I set out to create a Mac&Cheese that I could really get behind.  It definitely took a lot fails.  Learning to get that sauce just right took a lot of practice and I got to see just why I had tried so many mediocre versions of the dish.  Eventually, I got it to good.  Once I got it to good, then I could tweak it to really good. From there, I worked on it until it became what we have today, a delicious, not boring, really yummy, 10-years-in-the-making 4-Cheese Mac&Cheese.

I start by filling a large pot with well salted water.

Once you set your water to boil over high heat, you want to start prepping your cheese…

Here are your four cheese. Notice how they come in block form… the key to a good mac&cheese starts with shredding your own cheese. Not just because cheese you shred yourself turns out better, fresher and isn’t dried out by preservatives like flour or corn starch, but because you get to choose exactly what kind of cheese to use. Most of these varieties of cheese are not found in the preshredded bags hanging in the dairy aisle.

Shred each kind and leave each in their separate little mound.

Each cheese is chosen for a specific reason… Muenster has a lovely flavor and is a great melting cheese, so it adds in a smoothness to the recipe.

Monterey Jack is also a great melting cheese, but adds in a little more bite as it is a jack cheese.

Then forget about boring mac&cheese we are adding in some Pepper Jack! This is also a nicely melting cheese, but it is full of delicious flavor with that kick of pepper.

And last but not least a nice sharp aged cheddar. Use whatever your favorite is, but I have been addicted to Cabot Creamery’s Alpine Cheddar. I eat it nearly every morning with a cup of tea. It’s got these beautiful little crunchy bits from the aging process, OMG, yum!

Now that your cheese is set, your water should be boiling, so start the macaroni going…

Give it a stir right away. You want to cook covered over low heat (enough to keep it boiling) until about 1 minute under the package instructions, al dente.

In a large sauce pan add in 4 Tbs. of butter. You want to set your burner to med/low.

To that add in about 4 Tbs. of flour. You want to cook this flour for about a minute to get rid of that raw flour taste. If you are making this dish with a gluten free pasta and wish to keep this a gluten free dish, just use the same mesurements in corn starch, but you don't need to cook it off, just wisk to combine and move on.

Wisk that until somewhat smooth, if its a little lumpy, just add the next step in very slowly until you get a smooth mixture.

Slowly add in 3 cups of whole milk. The first cup should be added extra slowly to ensure your wisking allows for no lumps.

You should come up with a nice smooth base sauce.

This is one of those secret ingredients that can only be done if you do it exactly like this. If you have fresh nutmeg, grate some in. If you only have the kind of nutmeg that comes powdered, skip this step, it will kill your recipe.

Add in one cheese at a time, wisking slowly after each addition until fully combined.

I won’t go through pictures of all four as it looks pretty much the same for each step, just take it slow. This isn’t something that can be rushed.

Once all four cheeses have been combined, this is the kind of thickness you should have in your sauce.

To this add a fair amount of fresh cracked black pepper.

Before draining your macaroni, reserve one ladle of the pasta cooking water.

If your sauce is at the end stage after you’ve added in the black pepper, then great, add in the entire ladle of water to the sauce…. I know, you are ruining that lovely creaminess, but trust me, the sauce is too thick right now… remember, it still needs to be baked and our macaroni is al dente, so it needs to finish cooking. If the sauce is too thick, you will get a clumpy, dense macaroni and cheese. And nobody wants that.

After adding in that ladle of cooking water, this is now your sauce consistency. See how it got loosened right up?

Now that your sauce is set, hopefully it is timing out to be the same time as when your macaroni is ready, so let’s take care of that next…

You have already reserved a ladle of pasta cooking water, so now it’s time to drain out the rest and get to mixing.

Return your drained macaroni to the cooking pot. Your shells will naturally hold on to a little bit of the water, not to worry… This is cooked al dente, so it’s perfectly ok.

Pour your sauce over the macaroni.

I know this looks way too saucy right? It’s not, trust me.

Taste for salt at this point and add if needed. When I say taste, I mean taste with a piece of macaroni, you want to make sure the seasoning is right and this is your last shot.

I like to spray with cooking spray although it may not be necessary if you have the right dish.

Now you can add in to your baking dishes. This is a 12″x12″ baking dish and all of the Mac&Cheese would fit here, but for my family, we are only two adults and two small children, so I decided to divide it into one large dinner size portion.

One portion to freeze for later in this metal pan.

And one small casserole as an individual serving for my husband to bring to work.

Next and final step is the topping!

These are the scraps left on the cutting board from shredding your cheese… you want to gather those up and use them for the start to your topping.

Place them in a smallish bowl.

Baked Mac&Cheese just isn’t the same without a nice crispy topping. Start off with dicing up some butter.

Now, panko breadcrumbs, in my opinion, are the only way to go here. Add them in to your cheese and butter. (If you are making this gluten-free, I would suggest doing 1/2 gluten-free bread crumbs and half grated parmesan cheese, making it 5 cheese mac&cheese!)

Sprinkle with some salt and that’s it.

Just take a fork and combine, slicing with the side of the fork further breaking down that butter and cheese and folding the bread crumbs into it.

Liberally sprinkle over top.

Don’t forget the extra dishes…. However, I want to say, if you are freezing some, great, add this on… but, if you are refrigerating until the next day, hold off on adding the topping until just before baking. If you refrigerate the panko, they tend to soften up, hard to have a crispy topping with softened bread crumbs.

Bake the larger dish on 375°F for 40 mins, less for smaller dishes (I kept the individual one in there for 30 mins)… Everything is cooked, the goal here is to let the sauce marry with the macaroni and the topping to crisp up and brown a bit.

Recipe for 4-Cheese Mac&Cheese:

(serves 6)

1 cup Muenster Cheese, shredded

1 cup Monterey Jack Cheese, shredded

1 cup Pepper Jack Cheese, shredded

1 cup Aged cheddar cheese, shredded (Alpine cheddar preferred)

4 Tbs. flour

4 Tbs. Butter

3 cups milk

1 cup macaroni cooking water

1 lb. medium shells macaroni, cooked with salted water to al dente (or elbows with ridges)

 

fresh cracked black pepper

kosher salt to taste

For topping:

2 Tbs. butter, cubed

1 cup panko bread crumbs

real nutmeg, grated

1/2 cup combination of above shredded cheeses

1 tsp. kosher salt

Directions:

In a large sauce pan over med/low heat, melt butter. Wisk in flour and cook for a minute.  Slowly add in milk while wisking slowly.  Heat through until hot enough to melt cheese.  Add in each of the four portions of cheese separately, being sure to wisk each one in to combine fully before adding the next.  Your sauce should now be pretty thick.  Add in a few grates of nutmeg.  Then add in a few cracks of black pepper.  Now continue wisking and wisk in one ladle of the hot macaroni cooking water (about 1 cup). Your sauce should be a bit more thinned out now.

Drain macaroni and place back into large cooking pot.  Pour sauce over macaroni.  Mix together and taste for salt.  Add salt if needed.  Pour into prepared sprayed casserole.

In a small bowl combine all the ingredients for the topping and mush together with a fork.  Liberally sprinkle over top of the casserole.

Bake at 375°F for 30-40 mins. until golden brown on top.

Easy 3 Layer Dip

Are you ready for some footballlllll????  We are! With the start of football season kicking off this weekend, I thought it only appropriate to post a fun, quick, tasty and super easy dip to take along to any football party or tailgating you might be doing! I have been making this dip for years and I can tell you from personal experience, it is almost addicting!  Just three simple layers, this is a no-bake recipe that will have them asking for more each time you come out to a party!

Ready in under 5 minutes, this dip is perfect for the busy mom or dad on the run!  It also keeps really well and can be made hours before the party and kept covered in the fridge!  Take it out about an hour before you are ready to serve, grab a bag of tortilla chips and you’re good to go!

Add one bar of softened cream cheese to a mixing bowl.

To the cream cheese, add in a half a cup of sour cream. I used to do this recipe without this ingredient, so if you don’t have any on hand, don’t worry about it, but I find that it really helps with texture and softens this layer up a bit, which in turn helps get the dip on the chip.

I have put taco seasoning recipes up in different posts before, if you have some of that already made, then just add in 3 Tbs. of that, if not, just grab a packet of pre-made taco seasoning and add it in. I told you this would be quick and easy!

With these three ingredients in the bowl, whip together. I used my electric mixer, about 45 seconds on high did it just perfect. If you don’t have a mixer, it may take you a minute and a half to mix with a wooden spoon.

Once your mix is complete, scoop it out into your serving dish.

I usually use a pie plate for this, but today I had a pretty blue casserole dish at the ready, so I used that. I spread an even layer at the bottom.

Again, I told you this would be quick and easy. Grab your favorite salsa, hot and spicy, medium or mild, you know your crowd, use what you like… We like medium. I also like the body that the chunky variety gives. And hey if you already have a saucy salsa home-made and ready, go ahead and use it! Spread your salsa evenly to create your second layer.

Now add on some cheese, spread evenly to create your third and final layer. If you are a regular on this blog, you know that I almost always shred my own cheese, but quick and easy is the name of the game here today, so some pre-shredded is how I’m going today. Plus I find that when leaving the pre-shredded stuff exposed to air it holds up a bit better than freshly shredded. Please note that if you are trying to keep this gluten-free, you really need to check your labels because some company’s coat the cheese in flour to preserve.

Spread your cheese over your layer of salsa.

I like to add a couple of toppings to this dip. This is completely optional, so I don’t count it as a layer. The first topping I add is a small can of drained pre-sliced black olives.

The second and final topping I like to add is jalapeno. Again, this is totally optional.

I slice it up super thin.

Then spread about half a pepper’s worth of slices around the top.

Serve with tortilla chips.

Recipe for Easy 3 Layer Dip:

(serves 10-12)

1 bar cream cheese

1/2 cup sour cream

1 packet taco seasoning

1 1/2 cups ready-made salsa

1 1/2 – 2 cups shredded cheddar cheese

1/2 diced jalapeno (optional)

10 black olives, sliced (optional)

Directions:

In a mixing bowl, whip together cream cheese, sour cream and taco seasoning.  Spread mixture into a pie plate or small casserole dish.  Add an even layer of jarred salsa.  Add an even layer of shredded cheese.  Top with olives and jalapeno.

*Note – This recipe is Gluten-free as long as the specific brands used are gluten-free.

I didn’t know about Caprese Salad until I was an adult. Not something very common in the Portuguese household I grew up in.  We had tomatoes, sure, but basil, nah… parsley, yes, couves (kale) yes, but no basil.  And sure we had cheese, but not motzerella cheese, heck my parents even made their own white cheese in a little ring (which is totally delicious and totally off topic).  But, I digress, the point it, this is not something I was ever exposed to… however, later on… sometime in my mid-20’s I think, I experienced this salad… Yes, I said experienced, because in my opinion, it is surely not like any other salad I had ever had… And I have been making this late summer salad ever since!

It’s a simple salad, just three main ingredients.  The key to this salad is balance. The medley of flavors is something that can not be created with anything else in the world.  Freshly grown tomatoes straight from the garden, hand picked basil leaves and good quality motzerella cheese topped with a simple drizzle of olive oil, aged balsamic vinegar and a dash of salt and pepper… could there possibly be anything better?

I have these lovely sweet cherry tomatoes. In season and perfect for any salad, but when tomatoes are the star ingredient, they are especially yummy.

This size ball matches up perfectly to the size of the tomato.

Slice each ball in half and add to the tomatoes.

Grab some fresh basil. You want to pinch it off right where you see the next leaves sprouting. That will ensure new growth.

Mix together in preparation for dressing.

Start the dressing by sprinkling kosher salt.

Crack some fresh cracked black pepper.

Now drizzle with extra version olive oil.

A nice aged imported balsamic vinegar is key here, so you want to buy the nicest one you can afford… You should be able to get a decent one for under $20 and it will last a while…

Drizzle the balsamic.

I’m not sure if you noticed, but please take note, I made sure that each ingredient was exactly equal.  That is to say there are an equal number of tomato pieces to cheese pieces to basil pieces ensuring that each and every bite will incorporate all three ingredients at the same time allowing them to join together in a wonderful burst of flavor in your mouth!

12 cherry tomatoes, halved

Sausage Stuffed Peppers

Bell peppers and I have had a tumultuous past.  As a kid I hated all of them, but someone once told me that every 7 years your taste buds change.  In my case this is definitely true.  I still don’t care much for the green bell peppers, but the red, orange and yellow ones are super sweet and really lovely.  I think one of the reasons for my aversion to bell peppers started when I would try to eat the traditional stuffed bell pepper, over cooked mushy green bell pepper with some pretty bland ground beef, rice and tomato sauce… Now that I have an appreciation for this fine vegetable and we are in the time of year that they are popping out of people’s gardens across the nation, I decided to give the bell pepper the status it deserves.  So, I created the Sausage Stuffed Pepper!

In this beautiful little pepper you will find not only lean ground beef, but hot Italian sausage, brown rice, onions, tomato sauce and my secret ingredient… Swiss cheese.  I decided to keep the ingredients super simple and let the sausage do most of the work for me.  It’s a super simple and delicious dinner to get on the table to spice things up.  And as a mom, I have to tell ya, I love it when a fully balanced meal is all in one tidy package like this.

Now, my husband is still at odds with the poor little bell pepper, so I simply took some of the filling and placed it in an individual casserole dish for him.  If you have pepper haters in your life or just want to try something different, this filling can be placed in a hollowed out zucchini, eggplant or ooooo spaghetti squash, yum.  It’s super versatile and easy to work with.  Give it a try!

The recipe I am going to go through with you is for my small family, so I am only making three peppers and a small casserole as I mentioned… but, you can absolutely double or triple without a problem… You could even double and freeze half if you like…

Start with some lean ground beef, the sausage will provide plenty of fat. I use half a pound. Start this sauteing in a large skillet over medium heat.

Then I used three hot Italian sausages… If you don’t care for spicy food, you could certainly use mild, it will be super yummy too!

I cut down the side to remove the casing.

Give one medium onion a medium dice.

This is a small can of plain tomato sauce. You will use half now and half when you bake and serve.

You’ll want to shred up about a cup for the filling.

Brown up your ground beef while breaking up and browning your sausage meat.

Add your onions right in while you are doing this.

Let them get all nice and brown and lovely in the pan.

Add in about a cup and a half of cooked brown rice. (this is great to do when you have left over rice from dinner the night before… you might even cook a bit extra if you know this is your plan… saves you a step)

Once all combined, I like to transfer to a bowl to cool it a bit. If you want to stick to the pan, that's fine too, less dishes.

Add in half a small can of tomato sauce.

Combine.

Then add in your cup of cheese and mix in… if your mixture is super hot, you will have to work quickly here so that the cheese doesn’t all clump together.

Once combined, just taste for salt and add a pinch of salt and fresh cracked black pepper.

You’ll want to cut off the top and remove the seeds from both top and bottom. I try and cut just the very top so there is lots of room for stuffing.

They are all ready, you don’t need to do anything to the insides other than remove those seeds.

Now to prepare the baking dish, I put in some olive oil. (This baking dish I am using is stone, if you are using a metal baking dish, be sure to really coat with a non-stick cooking spray or a bit more oil)

And about half of what is remaining in that small can of tomato sauce… I like to reserve some for serving.

Place the peppers in the pan standing up.

Fill each one evenly.

It’s great if you over stuff a bit.

Then top with your remaining cheese. Pile it on, don’t be shy.

Pop the top back on and it’s ready to go into your preheated 350°F oven for about half an hour. (I like my pepper a bit on the firm side and the filling is fully cooked so that’s just really getting heated through. If you like a softer pepper, go for 45 minutes, etc, until you get the pepper to the consistency you like)

And this is what you get when they come out of the oven… Still firm enough to stand up and hold the filling and heated to perfection.

1/2 lb. lean ground beef

3 Hot Italian Sausage links, removed from casing

1 medium onion, diced

1 1/2 cups cooked brown rice

1 small can tomato sauce, divided

1 1/2 cups Swiss cheese, shredded

3 bell peppers, seeded

kosher salt and fresh cracked black pepper to taste

1 Tbs. olive oil

Directions:

Preheat oven to 350°F.

In a skillet brown the ground beef, sausage and onion over medium heat.  Once fully browned and onions are soft, add in cooked brown rice. Combine and transfer to a mixing bowl for easier handling.  Add in 1/2 can of tomato sauce.  Combine.  Add in 1 cup of shredded cheese.  Combine.

Prepare peppers by cutting off the top and removing the seeds from the top and bottom.  Prepare a baking dish by adding in the olive oil and 1/2 of the remaining tomato sauce.  Spread.

Add filling to each pepper, overstuffing if possible.  Top with remaining cheese.  Add on the top of each pepper.  Bake for 30-45 minutes uncovered.

Serve with remaining tomato sauce, Enjoy!
